Catfish filet dusted with Benny's Bold and Spicy.

Into pan with olive oil 450 degree oven for 5 min, add knob of butter start basting once butter has melted every few min until fish is firm to the touch and done about 10-12 min.

Serve with Tartar Sauce Salad to cut the richness:

Tartar Sauce Dressing: (mix with sturdy greens with lots of crunch)

3 tablespoons chopped pickles

tablespoon Japanese mayo

tablespoon no fat Greek yogurt

teaspoon rice wine vinegar

teaspoon lemon juice

teaspoon olive oil

Mix everything together.
