Super simple, grate a potato add some salt let sit 5 min, squeeze out water. Form into pattys into hot pan olive oil until golden brown each side take out season. Render uncured bacon until crisp let cool. Bacon fat into pan sunny side up an egg. Serve with greek yugurt, scallions and rustic toast with olive oil.
