Ever wish you could have that perfect bite of chicken, blue cheese and hot sauce...here it is. I got the idea from the Grande Lux Cafe in Vegas and tweaked it a bit to be more healthy frying in Olive Oil and using good organic chicken. Even though they are deep fried in olive oil there is no chicken fat and no chicken skin making them less fatty than the original how wings!

Ingredients

  • 6 oz chicken breast
  • 2 oz maytag blue
  • 3 tablespoons Franks hot wing sauce
  • panko bread crumbs
  • olive oil for frying
  • Greek Yogurt

Directions

Put the chicken, hot sauce and blue cheese into a food processor and blitz a few times until it is a chunky paste as you can see by the photos.

Here is where I would do a test make a little dollop of it on a tray and bake at 375 until done then taste. Some people want more hot sauce more blue cheese etc. Adjust to your liking the amounts I gave you here is what I liked. The mixture should be fairly wet.

Take about a walnut size ball and roll it in panko breadcrumbs making sure to push in the panko so you have a nice even coating. (you do not use egg wash). Once they are all done let set in the fridge for 5 min.

 

To cook heat some olive oil to 375 degrees and fry in batched until golden brown about 3 min or so. Once fried put into a 325 degree oven on a rack for another five min to make sure they are cooked all the way through.

To serve you can use a little Greek yogurt to cool it down and cut the richness. You should have the perfect bite of chicken, hot sauce and blue cheese just in the buffalo chicken ball itself. Perfect for snacks, parties and kids love them!
