Excellent wing action and good for parties as these are great at room temp. Baked not fried and omitting the fatty blue cheese makes these a little healthier. Enjoy!

Buffalo Honey Wings

Ingredients

  • 12 or so chicken drumettes 5-6 per person
  • sliced scallion
  • toasted sesame seeds
  • equal parts Frank's buffalo wing sauce and honey
  • pinch of cinnamon
  • olive oil
  • kosher salt and pepper

Directions

Make the wing sauce mix equal parts of Franks Hot Sauce and Honey. Add a little pinch of cinnamon and mix well. Set in the fridge until use.

Preheat oven to 325 degrees and toss your drumettes with olive oil, kosher salt and pepper. Now onto a baking vessel I used this cast iron pan as its a cool way to serve the drumettes and keep them hot for a long time but any baking tray with do.

Into the oven for about an hour but start turning them every ten min or so as you will render all the fat out nicely this way and get an even brown.

Once they are looking brown turn the heat up to 375degrees and paint on the sauce, back into the oven for a few min then turn over and paint more sauce on. Do this for 3 or 4 layers until you have a nice shellack looking glaze on the outside (see photo) .

Take out let rest for a few min use a paper towel to blot out any of the oil on the bottom. Finish with some toasted sesame seeds and fresh sliced scallions.
