Heading to Dublin Fritada

- 8 eggs
- ½ cup cream
- 8 oz homemade chicken sausage
- Box of small cherry tomatoes
- One pound of fresh spinach
- ½ cup mascarpone cheese or cream cheese works fine
- Olive oil
- Sharp cheddar cheese
- Kosher salt
Method whisk the eggs together with the cream and set aside.
Now break up the sausage and brown in a pan with a little olive oil with the tomatoes.
Once the tomatoes and sausage have broken down add the spinach and let wilt.
Now add the mascarpone cheese and mix together so you almost have a cheesy sauce.
Now pour eggs in and shred some sort of sharp cheese on top.
Let the bottom set a little the transfer to a 375 degree oven until golden brown on top.
Take out and let rest for at least 10-15 min.
Serve with a nice salad and some low carb round just like me.
