2 Posh Mushrooms on Toast

Inspired by one of my fave chefs from Britain (Jamie Oliver). It's my version of the British classic. Great thing here is you can use any combination of mushrooms there are no rules.

Posh Mushrooms on Toast

Ingredients

  • slice of good hearty bread
  • 2 cups of mushrooms any kinds mix and match is good
  • two cups fresh spinach
  • one small tomato chopped
  • 2 cloves of garlic chopped
  • fresh mozzarella
  • olive oil
  • kosher salt and pepper
  • pinch of dried chili
  • knob of unsalted butter

Directions

Start by cutting your mushrooms into quarters and saute them in olive oil, kosher salt and pepper until they start to caramelize about 15-20 min.

Now add the garlic, tomato, spinach, chili and the butter and saute until all the water is out  of the spinach and you have a nice tight (meaning no water in the pan) melody of your vegetables.

Take a nice hearty large slice of bread add a little olive oil and toast it (important part). now spoon  the mushrooms onto the toast piling it as high as you can. Now take some fresh mozzarella and put some of the top (see photos). Add a little salt to the top and olive oil and into a 450degree oven until cheese is bubbling about ten min.

Take out and if you can using a spatula elevate it so while it rests the bottom does not steam soggy. This will make for a nice crisp bread.

Finish with some grated Parmesan cheese and enjoy!
