Ingredients
- Cleaned Sea bass
- Kosher salt
- Some fennel powder
- Some lemon
- olive oil
Directions
Start with the whole fish cleaned and descaled. Now cut some slits as in my photos and season with olive oil, kosher salt and pepper. Into a 475 degree oven uncovered for about 20 min or so. It will be done when the skin is crispy and the fat is bubbling around the slits.
Let it rest, finished with some fennel powder, olive oil and a little lemon. No better way to eat this fish, I love the cheeks in the head and the collar as the meat is rich and fatty, just a beautiful fish that’s is so good for you!
