0 Spicy Hamachi Sashimi

Was at the Lobster Place in Chelsea Market and they, for the first time had some Hamachi and I could not pass it up. So I picked up a filet and started to experiment how to just lift this amazing fish to another level. I love the heat of wasabi but I also like the heat of chilies. I found some amazing chili olive oil from Italy so I thought I would give it a try by placing a few drops on the fish with a slash of wasabi on the bottom of the plate. It worked great; you have the wasabi aromatic fumes in your head and the warm chili heat in your mouth. None of the two components hide the flavor of the fish it came through just as it should so beautifully. This was just what I wanted as a snack so I thought I would share it with you.

Ingredients
- Fresh Hamachi, filet it for sashimi
- Chili olive oil
- Wasabi
- Light soy sauce
Directions
Filet the Hamachi into perfect bit size sashimi pieces. This should be done from a piece that has been cleaned and prepped for sashimi from your fish monger
Take a pastry brush and put a light swatch of wasabi on the plate.
Place the Hamachi on the plate.
Take a wooden skewer dip it into the chili oil and let drip on the fish.
