Three Ingredients Best Ever Broccoli Soup

- Broccoli florets and about 3 inch of the stem about 3 cups
- Kosher salt
Put the broccoli in a pot and cover with water and a couple of pinches of kosher salt. (use as much or as little broccoli as you want, the key is to just cover it with water and you will have your ratio perfect.)
Bring to a boil and as soon as a fork can go into the stem easy take it off the heat. Now using either a hand blender or a regular one blitz it until it is nice and smooth.
Return to the heat check for seasoning adjust salt to your liking and you’re done!
You can serve it with a little piece of goat cheese on the bottom of the bowl, I added a tablespoon of cream or just on its own it will be perfect. Does not get any better than this.
