Tuna and Pepper Melt

- one can albacore tuna packed in oive oil
- 2 tablespoons chopped shallots
- tablespoon mayo
- pickled hot peppers
- grated sharp cheddar cheese
- rustic bread
- kosher salt and pepper
Combine the Tuna, mayo and shallots and mix well season with kosher salt and pepper to taste. Make sure to add the olive oil from the can its flavorful and helps with moisture.
Toast your bread so its just turning a little dark. Now spread the tuna on top in an even layer (see photo) now put on your hot peppers and a good grating of sharp Cheddar cheese. Into a 450 degree oven until the cheese has melted and bubbling. I like to finish with some dried chili for heat.
Enjoy it with a simple salad with a little olive oil and fresh lemon juice.
