11 Cafe Vettro, Aria Hotel Las Vegas Nevada

Just spent some time at this fabulous hotel one of the newest in Las Vegas and I was dully impressed with just about everything from the rooms, the service the architect and on and on. Now one of the first places I like to check out as it shows me a road map to what standard a hotel in Vegas will shoot for is the hotel cafe. Now I have my favorites like at the Bellagio, always loved and has given me so many great memories of late night fodder and so many great guest just hanging around eating crab cakes every nite there were times I though this was my set for my own talk show .
Well Cafe Vette does not have quite the same setting but if you want real good value for money eats in a stunning atmosphere this is the place. I had two dishes but and was enough for me to determine along with me snooping at other tables that this was a great 24/7 eatery in Las Vegas that I would make the trip for even if I was not staying at the hotel .
Here is the starter I ordered upon recommendation of our waiter was the Roasted Tomato soup. I could tell that this soup started with a really nice fresh base of tomatoes, onion, garlic, basil but they added some form or thickener which for a Vegas cafe crowd I can understand. The flavor held up and it was very satisfying without being gloppy. I just wished they would not add these thickeners so people feel that they are getting a more hearty soup.
Here is a salad I saw at another table that caught my eye and I had to know what it was. The server who was very very profession, knowledgeable and attentive told me its their #1 Salad the "Asian Chicken Chopped Salad" This salad had no chance to disappoint. When it arrived and I tell you it had the following : Greens, fried won ton strips, all colored bell peppers thinly slices, cucumbers, a load of thinly sliced chicken breast, sprouts, scallions and tomato. The dressing was very subtle with a hint of ginger and sweet but not over bearing and its base was nutruel oil with a touch of acid which I think was lime.
Here is what I saw while dinning. The green pillars were everywhere and this place had a feeling of grandness it was just relaxing with not feeling of rushing to go anywhere.

That was it, the bread selection I may add was fantastic with assortment of focaccio, rolls, cheese sticks and crackers with some very soft unsalted butter in a dish, nice touch. I will be back and I hope next time not so coherent.
