Baby Bok Choy with Shrimp Chili and Peanuts

Ingredients
- two heads of baby bok choy
- 2 cloves of garlic chopped
- one red chilli chopped
- 4-5 large shrimp cleaned and chopped into three
- 2 tablespoons of crushed peanuts
- 2 tablespoons oyster sauce
- seasame chili oil
Directions
Start by washing your bok choy and then cutting each one into quarters making sure to leave the root at the bottom intact.
Now you can either steam them for a couple of min or blanch them in boiling water but if you do that put them in the water the hard white end first let that cook for one min then the rest in for 5 seconds then take out and drain.(remember it's dead already you don't have to cook the hell out of it)
In a hot pan add a little vegetable oil and quickly stir fry the garlic , chili and shrimp for one min. Now add the oyster sauce and stir around until its bubbling, add a touch of water maybe a tablespoon to thin it out and cook until just becoming a little thick you don't want it watery.
Lay the bok choy on a plate and spoon the shrimp mixture onto each one and finished with some crushed peanuts and a drizzle of sesame chili oil. Delicious and healthy!
