OK, not for everyone but I love these and get them at my favorite Dim Sum place in Chinatown in New York every time I'm there. If you love that perfect bite of skin with fat and a little meat these are for you if not.... I'm sure there is a local Domino's :)

Braised Chicken Feet

Ingredients

  • 1 pound chicken feet trim the nails off
  • 1 4 cloves of garlic chopped
  • 1 holland chile or any hot red chile
  • 2 cups chicken stock
  • 1 cup light soy sauce
  • 3 tablespoons brown sugar
  • 1/2 cup black beans
  • Vegatable oil for frying
  • 1/4 cup oyster sauce
  • knob of ginger chopped

Directions

Start by washing the chicken feet and cutting the nails off. Marinate chicken feet in 1/2 cup of soy sauce for 30–40 minutes. Drain and discard marinade. In a a wok or large pot deep fry the chicken feet in vegetable oil at 375degrees until chicken feet are golden brown . Do these in batched as to not crowd them in the oil they need some room on their own while cooking.

Drain excess oil and soak fried chicken feet in a big bowl of cold water for 30-60 minutes or until they puff up. Drain soaked chicken feet in a colander.

In same a wok/pot sauté garlic, black beans, ginger and chilies until fragrant. Add in the chicken feet and stir fry for 1-2 minutes. Add the  soy sauce, oyster sauce and brown sugar and continue to stir fry for another 1-2 minutes. Add in 4-6 cups of water and the chicken stock, bring to a boil and simmer for 60-90  minutes or until chicken feet are tender and liquid turns thick and into a glaze.. Serve hot because cold chicken feet suck!
