0 Broccoli Fritters made with Almond Flour

Quick and easy and perfect snack or on the run food. I used almond flour which works great, taste great and makes the recipe basically carb free. Takes less than 30 min to put together and they reheat well and are good at room temp.

Ingredients

  • 2 cups steamed broccoli
  • 1 cup chopped onion
  • handful fresh dill chopped
  • 1 1/2 cups almond flour AP flour can be used but this lowers the carbs
  • kosher salt and pepper
  • olive oil for frying
  • 2 large eggs

Directions

Start by steaming the broccoli until tender and rough chop it. Add all the ingredients in a bowl, season with salt and pepper and mix well.

In a pan put about 3/4 of an inch of olive oil (vegetable oil works as well). heat to about 350 degrees.

Using a tablespoon grab a dollop in the spoon and press it against the side of the bowl then slide it into the hot oil. Once in the oil give the pan a gentle shake to make sure the fritter is not sticking to the bottom. Fry for about 90 seconds to 2 min checking by looking to see if its brown yet. Flip when it's ready and finish cooking another min or until the other side is also browned.

Take out and drain on a rack and into a 200 degree oven to keep warm while you finish the rest. (you can also let them cool to room temp)

Serve with a dipping sauce you can use plain yogurt or add a little mayo to plain yogurt and pinch of curry powder (Madras is my choice)
