Ingredients
- 2 tablespoons Good thick cut pork chop
- One pound of baby spinach
Pork marinade:
- ¼ cup Brown sugar
- ¼ cup soy sauce
- One glove garlic crushed
- Few drops of sesame oil
- Small knob of ginger grated. Mix together and pour over chops and let marinate overnight
Finishing sauce:
- juices from the resting chop
- dash of Worcestershire sauce
- 2 tablespoons red wine
- 2 tablespoons balsamic
Directions
Pork marinade: mix together and pour over chops and let marinate overnight
Bring your chop to room temp before grilling or frying, also cut a few slices into the fat on the rind so it does not curl when cooking. Start with a hot grill, season your chop and grill at high heat about 5-7 min first side until nice crust is formed and turn over and give it another 3 min or so, take it off and let it rest.
Now hot pan olive oil add your spinach and sauté until fully cooked and a nice green color season with salt along the way, I also added a few chopped tomatoes to mine. Now take the resting juices of the chop and make the finishing sauce .
To plate I used a ring mold to set the spinach, I sliced the pork trimming the ends off so it’s all nice white meat and finished with the sauce. Excellent flavor, the pork is lean the fat is olive oil so this one is good for you and hits the spot!
