Fire Roasted Peppers and Manchego Cheese

Ingredients
- your favorite Manchego Cheese Spanish cheese I used 8 month aged but 6 works fine as well less nutty
- fire roasted peppers jar is fine for this
- red wine vinegar
- olive oil
- kosher salt
- smoked paprika
Directions
It could not be easier start by cutting your pepper and manchego cheese roughly the same size. Now place a piece of the cheese on top of the peppers slice as I have in my photo.
Now a little splash of red wine vinegar and a drizzle of olive oil and a few grains of kosher salt.
Into a 450 degree oven for about 2 min until the cheese is melted we don't want any color here just to heat the pepper and melt the cheese.
Take out and let rest for a min then dust a little smoked paprika on top and eat with some flat bread or on its own its just fantastic!

Hi, loving your recipes, but the green banner to the right is obscuring the right side of the blog! I can't see the right hand side part of them, and have to copy and paste to read thm.

I'm using Firefox 3.6 (and 6.0) on Linux, resolution 1280x1024 (though if I change the font size it still happens anyway). Screenshot: http://movementarian.org/~movement/benny.png
It's OK with Google Chrome, on the same screen the green column appears further to the right and doesn't obscure anything.
