Ingredients
- Thick cut pork chops
- Puff pastry sheet
- Maytag blue cheese
- Fresh apple
- Cinnamon
- butter
Pork chop marinade:
- ½ cup soy sauce
- Knob of grated ginger
- 2 cloves garlic
- 2 tablespoons brown sugar
- ½ teaspoon sesame oil. Combine all ingredients and marinate pork chops overnight.

Red Wine sauce:
After the pork chops have rested pour the juice into a small sauce pan and add ½ cup red wine, knob of butter, dash of Worcestershire sauce, teaspoon of honey and reduce at medium heat until a rich glossy consistency.
Apple Blue cheese tart:
Roll out puff pastry sheet, cut out a circle around the same size as the pork chops, now put a thin layer of your favorite blue cheese, now top with sliced apple, add a teaspoon of sugar, dusting or cinnamon and a knob of butter. Bake at 375 degrees until golden brown, take out and let rest as you prepare the pork chops.
Season the marinated pork chops and cut a few slits in the fat on the rind to keep it from curling up and grill them about 4-5 min each side and let rest for at least 5 min. To assemble place the tart on a plate, now lay the pork chop on top and finish with the red wine sauce. Get a little of the tart with each bite and you will have your eyes rolling in the back of your head it’s just so good!
