Healthy KFC Chicken (Kentucky Fried Chicken)

- one pound chicken tenders
- 1 1/2 cups organic flour /regular AP flour will do
- 3 tablespoons Old Bay Seasoning
- one cup of buttermilk /regular whole milk will work
- olive oil for frying /vegetable oil will work
Directions
This does not get any easier and the results are amazing....ready...
Take your chicken tenderloin and cut into nugget sizes in half or thirds depending on the size of the tenderloin.
Now into a bowl with the buttermilk and let set in the fridge for 30 min or so.
In another bowl mix the flour and Old Bay Seasoning together.
Now take the chicken tenders and lets the excess buttermilk shake off and into the flour mixture making sure to coat them well pushing in the flour when needed so they are even.
Do this for all the tenderloin pieces and onto a baking tray making sure not to touch each other and into a fridge for at least ten min.
Heat your oil to around 375degrees if you dont have a thermometer use a piece of bread and dip it in the oil if it starts to fry your oil is ready. Now you can deep fry these or shallow fry them as I did.
Fry them in small batches until dark brown (as you can see in the picture) and onto a grated rack and into a 220 degree oven while you finish the rest.
These will be more like original KFC chicken not crispy but really savory and should be moist if you did not over cook them.
Enjoy them plain, cold or with some nuclear orange macaroni salad and you are good to go!

NOTE: To make regular KFC you can use standard chicken pieces (leg, thigh, drumstick, breast) with the skin on to achieve authentic KFC chicken.
Soak the pieces in buttermilk or regular milk for 20 min then dredge in the Old Bay/Flour mixture and if possible deep fry at 350 degrees until golden brown about 12-15 min.
