Ingredients
- 1 14 oz can Strained Tomatoes
- 1 cup chopped onions
- 1 clove of garlic chopped
- 1/2 cup brown sugar
- 1/4 cup corn syrup
- 1/4 teaspoon cinnamon
- pinch of salt
- 3/4 cup white vinegar
- tablespoon Olive Oil
Directions
Start with sweating the garlic and onion in the olive oil with a pinch of salt. I also add a little water to help it out and to make sure you get no color on the onions and garlic.
Now add all the other ingredients (tomato, sugar, corn syrup, vinegar cinnamon) and bring to a simmer. Now put it all into a blender and blitz for 30 seconds making sure to cover the top with a towel to prevent splashing (never put a sealed lid on hot items you are blending always take the center cap out and cover with a towel and begin to blend by pulsing) Back into the pot.
Now this is where you can adjust the taste as it reduces. It will be runny at this point but start reducing it down and taste it along the way. Do you want more vinegar, does it need a touch more brown sugar. You are going to want to reduce this stirring constantly until it has a pudding like texture. If you have a packet of commercial ketchup you can compare the two. It should have a nice shine to it and have intense flavor of sweet and vinegar when its ready.
Remember that you are tasting this while it's hot the flavor and constancy will change (firm up) when its cooled.
Store in your favorite jar, will be good for 2 weeks or more.
