3 Organic Rich Chocolate Pudding (no Cornstarch version)

This is a rich dark chocolate pudding using some simple ingredients and no cornstarch to make a wonderfully perfect end to day treat. Note, I used all organic milk, chocolate, sugar etc but you can use regular ingredients it will still be delicious. I find using just a little flour and no cornstarch gives it a more velvety texture.

Ingredients

  • 3/4 cup sugar
  • 1/4 cup flour
  • 3/4 cup 70% dark chocolate you can adjust to taste
  • 2 2/3 cup whole milk
  • 4 egg yolks beaten
  • 1 tablespoon unsalted butter
  • 2 teaspoons vanilla
  • 1/2 teaspoon kosher or sea salt

Directions

Combine all the ingredients except for the eggs and milk into a saucepan. Start whisking in the milk slowly on medium hi heat and keep whisking for about 10-15 min until the mixture comes to a scald (almost boiling but not quite) making sure all the chocolate is melted nice and velvety

Have your eggs whisked well in a bowl and take a ladle of the mixture and slowly add it to the eggs whisking all the time (about 10min) tempering the eggs so they don't scramble.( see photo). Once the ladle mixture is in the eggs you can now slowly pour the egg mixture back into the sauce pan while whisking making the eggs get incorporated.

Now continue to stir (never stop) until the mixture is thickening it should be the consistency of a pastry custard (about 5 min).

Pour into a bowl let cool for ten min then put cling film on top making sure its pressed against the pudding so it does not form a skin. Let cool to room temp then into the fridge overnight for best results.

To serve shave some more dark chocolate on top. you can add a dollop of whip cream or as I did crushed up some amaretto cookies and sprinkle on top.
