Feb 16

Pork Jowl with Sauteed Bok Choy (Custom)
So here we are again with some hopped up ponncy looking dish but in reality I just took what would be a lovely marinated pork jowl that would be served with some sautéed greens and made it look like something you might pay some real money for in a restaurant. I think it does look beautiful and I did the presentation a few ways which you will see in the final product photos. I’ll walk you through it…do this one right on a date and its guarantee success.

    10 hour, 20 min

Servings

2 servings

Ingredients

  • Pork Jowl slab
  • Bok Choy

Marinade:

  • Cup soy sauce
  • Tablespoon sesame oil
  • 2 tablespoons rice wine vinegar
  • One chopped chili
  • One clove chopped garlic

Directions

Combine all the marinade ingredients and coat the pork jowls and marinade overnight at the very least if not 3 or 4 days as I did.

Now with a very hot bbq grill the pork until it’s nice and crusty on one side then turn over and finish about 4 min on the other side. This is a thin piece of meat with a TON of fat in it and you really need to grill it for this amount of time to melt all that fat in the middle or it will be not so pleasant to eat.

Now while the meat is resting trim the tuff ends off the bok choy and sautéed in olive oil with a dash of light soy sauce until just wilted.

Follow the plating procedure I have laid out in the picture if you want to make it look fancy or you can just lay the bok choy on a plate and place the pork jowl on top and serve.

Check out my photos not too difficult to make. It look like a million bucks.

I did finish with some tempura chips and fried bok choy in some of the pictures just wanted to give you some options for plating.

Enjoy!
