Quick and Simple Egg Drop Soup

Ingredients
- 4 cups vegetable or chicken stock I used a good high quality chicken cube
- tablespoon grated fresh ginger
- tablespoon fresh grated garlic
- teaspoon fish sauce
- several asparagus finely sliced you can use anything, rocket, bok choy etc
- teaspoon sesame oil
- one egg beaten
- 1 1/2 tablespoon corn starch disolved in 1/2 cup water
- 1/4 cup finely chopped scallion and more for garnish
Directions
Get your chicken or vegetable stock to a boil and add the ginger, garlic, scallion and any other vegetables you are adding like I used asparagus and let cook for 5 min. Now whisk the corn starch and water together and slowly drizzle it into the soup.
Now add the fish sauce and sesame oil and take off the heat. Now using a fork start whisking the soup and slowly pour in the whisked egg making sure it hits the fork and it broken up into the soup evenly.
Cook at a low simmer for another 5 min and its ready to serve. Garnish with some fresh scallion and maybe some chili oil. Quick easy, inexpensive and delicious!

NOTE: this soup does not keep well so just make enough for that serving. If you have some leftover take it off the heat let come to room temp then store in fridge. Best to reheat in the microwave.

Benny...this is so interesting....to make the egg-drop soup "oriental".....My mother cooked egg-drop soup when I was a child.... with chicken stock, carrots, parsnips, green onions, fresh spring peas... sometimes she added some cooked rice...before she added the egg....mixing it quickly with a fork.....
