Ingredients
- 6-8 oz filet of your favorote white fish (salmon works well here too)
- one cup of sliced onions
- 1/4 cup capers
- 5-6 of your favorite olives sliced
- one cup of tomato sauce
- one large clove of garlic finely chopped
- good splash of dry white wine
- kosher salt and pepper
- olive oil
- fresh parsley
- parmesean cheese for garnish
Directions
In a pan on medium high heat add some olive oil then the onions, capers, garlic, white wine, olives, salt and pepper and sauté until the onions have sweated a bit and just starting to caramelize. Give is a good toss every so often this should take about 5 min.
Now add your fish filet and season it with salt and pepper. Add the tomato sauce and make sure its covering the fish. Now into a 375 degree oven for about 15 min or so until the sauce is bubbling with the ingredients. Give is a little stir to make sure everything is covered in the sauce.
Once the sauce is reduced so its adhered to the fish and the other ingredients it's ready. Take the fish out carefully to a plate. Taste the sauce to make sure its seasoned to your liking and dress over the fish. Finish with some fresh chopped parsley and a good dusting of grated parmesan or any other dry sharp cheese.
Serve by itself for a low card meal or with some pasta tossed with butter and parmesan cheese.
