Salmon Sashimi with citrus and spicy sauce

Ingredients
- 6 oz salmon filet
- juice of half a lemon and lime
- 1/2 teaspoon sesame oil
- tablespoon olive oil
- finely chopped chives
- micro greens
- fresh dill
- spicy sauce 1/2 and 1/2 kewpie mayo and sraracha
Directions
Make your sauces first, combine the lime,lemon, olive oil and sesame oil and whisk together and set aside. Make the spicy sauce as well and put in the fridge.
Take your skinless salmon filet (the top part of the filet not the bottom with the belly) and about 1/4 inch thick with one motion and a very sharp knife (I do have a sushi knife) cut the filet into the slices.
Now lay on a plate any way you with to arrange them and spoon the citrus sauce over (this is start to cook the salmon a little so do it right as you are going to eat it). Now scatter some micro greens and chives around. I used radish leaves for a peppery flavor. Then put a small piece of fresh dill on each piece followed by a dot of the spicy sauce.You can use a little soy sauce but I think this it perfect just like this.
The health benefits are wonderful your body does not even digest salmon like this it just absorbs into your blood stream with all those wonderful oils.
Dont be afraid to try this, one note if the salmon if farmed after you have brined it make sure to wrap it and freeze it overnight to kill any bacteria it might have.
