Scallop with quail egg (Custom)
Here is a lovely starter that is rich and luscious. I love this one for late night when people are over. You can make a whole plate of these and I guarantee they will go quickly. This one is all about execution as the ingredients are simple but make sure you have the freshest of scallops.

Ingredients

  • Fresh large diver scallops
  • Quail eggs
  • Pancetta or chorizo sausage
  • Bib lettuce

Vinaigrette:

  • 3 parts Olive oil
  • 1 part Lemon juice
  • Pinch of whole grain mustard
  • Salt

Directions

Start with the sausage and cut into a small dice and cook in a pan with a little olive oil until most of the fat has rendered out. Transfer to a bowl and cover. Now take the lettuce leafs and using a cup or a ring cut out circles for the landing pad of this dish. Now cut the scallops in half and season one side and fry them in a hot pan with olive oil for about one min then turn them over for 30 sec and put aside.

In another small pan cook the quail eggs for about one min so the yolk is still runny but warm.

Now assemble, place the disks of lettuce on a plate followed by a piece of scallop, top with the quail egg and crumble the chorizo on top. Finish with a little of the vinaigrette and enjoy. Simple but amazing taste and presentation. These are great to serve room temperature so great for parties or get togethers.
