Scallop with sweet wonton and lemon zest (Custom)
Ok, edible art but is just an great tasting two biter. There is some structural integrity with this one but worth it. This is a good starter as its sweet, savory and has a little kick right before the lemon zest freshens you up.

Ingredients

  • Large diver scallops
  • won ton wrappers can be found at any large chain grocery store
  • sweet chili sauce found in asian markets and some good supermarkets
  • sliced scallions
  • black sesame seeds
  • zest of a lemon
  • parma ham

Directions

Start by making your crispy parma ham. Into a pan with a little olive oil and and fry on each side until crisp and set aside.

Take round won ton wrappers and fry in 375 degree oil until crisp, now paint on a layer of the sweet chili sauce on one side and sprinkle some black sesame seeds on them and set aside.

Now season your scallops with kosher salt and pepper and pan fry in olive oil until nicely seared about 2 min, turn over and give them another 20 seconds.

To assemble place some sliced scallions on the won ton followed by the scallop, now cut a slit in the scallop and insert that crispy piece of parma ham. Now finish with some lemon zest and impress your guests cause this one is delicious!
