1 Seared Tuna with Spaghetti Squash and Creamy Pesto

Love this combination of Spaghetti Squash and the tuna. I often roast the squash with olive oil, salt/pepper and parmesan cheese and eat it like that by itself. Take it a step further with the creamy pesto and now you have everyone loving this dish even kids! Two of the components of this dish can be made ahead of time so that plating and serving could not be more easier. This is good to impress at a dinner party. (Note the prep time includes roasting the squash)

Ingredients

  • One Spaghetti Squash
  • 6 oz Tuna filet per serving
  • olive oil
  • kosher salt and pepper
  • fresh lemon juice
  • Recipe for creamy pesto (see instructions)

Directions

Start by getting your Spaghetti Squash ready. Preheat oven to 425 degrees. Drizzle squash flesh with 2 tablespoons olive oil and season with salt and pepper. Place cut side down on a parchment-lined rimmed baking sheet. Roast until squash is tender when pierced with a knife, about 1 hour. Once cooled for 15 min take a fork and start scraping the flesh out you will see it comes out kind of looking like Spaghetti. Add a touch of fresh lemon juice  Cover and set aside.

Make your creamy pesto sauce starting with a basic pesto sauce. Here is one that use almonds which I find works perfect. This can keep until your ready to serve and you will have some leftover perfect for creamy pesto mayo (just add it to homemade mayo or good store bought) or to toss in with some warm noodles perfect quick snack.

Season your tuna filets with salt and pepper and in a hot pan with olive oil sear each side about a min or slightly less. You really want the center red not pink here. Take out and let rest for a few min.

While the tuna is resting gently warm about one cup of cream and add in 2-3 tablespoons of the pesto and stir until combined should be just slightly warmed through do not boil it! Warm your spaghetti squash as well.

To plate slice the tuna into nice thick pieces and lay on some of the spaghetti squash and drizzle the creamy pesto on top of the tuna and finish with some fresh herbs like chive, parsley or basil.
