Super simple and wonderful flavors. Always cheat and never make puff pastry just get some good quality and keep it in the freezer for those last minute recipes. These savory yet slightly tart tarts are the perfect snack to have while enjoying a good conversation with some wine and sunshine.

Ingredients

  • puff pastry
  • 2 cups chopped tomato
  • one clove of garlic finely chopped
  • olive oil
  • 1/4 cup balsamic vinegar
  • clumbled feta cheese
  • kosher salt and pepper

Directions

You can adjust the serving number by how much you want to make. One sheet of North American puff pastry after rolled out can yield you about eight 6 by 3 inch portions. The recipe here is to make 4 which was perfect for two people .

Start with a hot pan and olive oil. Toss in the tomato's and garlic, season with salt and pepper and cook tossing frequently until the tomato's start to break down. Now add the balsamic vinegar and cook  until it has reduced almost to a syrup. You will have what will look like tomato jam. Check for seasoning and let cool.

Roll out your puff pastry so its 1/8 of an inch thin and cut it into any size you like. (you can use my example) Now fold up the edges once and crimp down with the side of a fork. Now prick the bottom of the pastry so it wont puff up.

Spread in a thin layer of the tomato jam making sure to get it to all the corners of the pastry but not the edge you have created. Add some of the crumbled feta cheese and for added elegance brush the edge with egg yolk to give it that golden look.

Into a 400 degree oven for about 10-12 min or until the edge are nice and golden brown. Take out let cool to warm and serve. These are also great at room temp so you can make them ahead and leave them around for guest.
