Teriyaki Ginger Chicken Thighs (Chicken Candy)

- 4 or 5 organic chicken thighs
- Benny's Teriyaki Sauce see recipe below
- scallion to garnish
- kosher salt and pepper
- olive oil
Directions

First make the Teriyaki sauce combine all the ingredients in mix well and store in the fridge.
- 2 cup light soy sauce
- 1 cup brown sugar
- ¼ cup Mirin
- ¼ cup rice wine vinegar
- One tablespoon sesame oil
- 5 cloves of garlic finely chopped
- 6 tablespoons grated ginger
In a large pan as you don't want any of the chicken stacked up on one another put a little olive oil in the bottom and place your chicken thighs skin side up and season with salt and pepper. Now into a 450 degree oven for about 20 min or so until the skin is crispy. Now add about 1/2 cup or so or the marinade to the chicken enough to coat each piece and fill the pan with enough water to cover the chicken.
Back into the 450 degree oven until the water is boiling and then turn down to 275 degrees cover with foil and cook for about 4 hours or so (the longer the better you can do it in two hours) turning the chicken every 30 min or so.
To finish crank the heat up to 375degrees take the foil off and baste the chicken every 5 or so min as the sauce reduces to a glaze as you can see in the video and photo. Take out let rest garnish with some sliced scallions and go to chicken heaven.

Well Benny,
You did it again, incredible.
Though after cooking for only 2 hours and then only about 20 mins @ 375, I had to shut off the oven due to a medical emergency and they sat for a couple of hours before I could resume reducing the liquid and basting again. They were still out standing! I can't wait to try them again the correct way.
I would also like to compliment your method of cooking roast chicken, I will never roast a small bird at low temp again. It is messy in the oven but the best chicken ever. Salt, pepper and a chicken. Perfect!
