Picked up some amazing little neck clams from Chelsea Market here in New York and decide to showcase not just their taste but their amazing beauty. This one is quick and simple and you can make many more clams than 3 but this really shows how amazing these little creatures are. Here is my quick recipe for clams.

Ingredients

  • 6 dozen Fresh clams
  • 2 Chopped shallot
  • 4 Glove of chopped garlic
  • 1 ½ cups Dry white wine
  • Parsley
  • Olive Oil
  • 1 stick Butter

Directions

Clean the clams with a brush to get any grit or beards of them and rise them well. There should be no order at all .

Now chop the shallot and garlic ad to a hot pot with olive oil and begin to sweat them once then have become translucent add the dry white wine now add the clams.

Cook with the lid on for about 10 min until the clams open up make sure to discard any that are closed. After they have opened move the clams to a serving bowl or plate.

Now add the butter to reduce the broth to about half and pour over clams and finish with fresh chopped parsley. Serve with some grilled or toasted crusty bread to soak up all that amazing broth!
