Summer is approaching although you would not know it by the chilly weather out today but I thought lets bust out the old grill So I will lay out a BBQ sauce that you can make that has a little kick of heat to it and really works on just about every kind of protein. Please stop buying those 1.99bottles of cheap bbq sauce as its mostly corn syrup and crap not to mention more friggin plastic bottles to fill the earth up with. . You can make a bucket of this amazing sauce and give to neighbors or freeze it in portion size bags until you need it. It will keep for up to a week in the fridge. Ok here is the lowdown…

  • Prep Time:
    14 min
  • Cook Time:
    18 min
  • Ready Time:
    32 min

2 servings

  • One Spanish onion chopped
  • 3 gloves of garlic chopped
  • 2 cups of skinned tomatoes in a can
  • 3 tablespoons molasses
  • 3 tablespoons red wine vinegar
  • 2 tablespoons brown sugar
  • 3 tablespoons whole grain mustard
  • ¼ cup molasses
  • ¼ cup ketchup
  • ¼ cup Worcestershire sauce
  • 3 tablespoons smoked paprika
  • 3 or 4 pureed chipotle peppers
  • 4 tablespoons canola oil

Spice Rub:

  • 2 1/2 tablespoons smoked paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried leaf oregano
  • 1 tablespoon dried thyme
  • 1 tablespoon dried mustard

Take the onion oil and garlic and sweat them for about 4 min in a pot. Now add the tomatoes and simmer for 15 min, now add the rest of the ingredients and simmer for 45 min. Now transfer to a blender and puree until smooth, put in a bowl to let cool. This is tangy, sweet with some heat I think you’re gonna really enjoy this one folks.

BBQ Chicken Drumettes:
Get some organic chicken drumettes and as you can see in my photos cut the tendon at the bottom of the drumettes so when it cooks it balls up nicely and cooks more evenly. It also looks great as well like a chicken lollipop. I like to put them in a bowl with some canola oil and season with salt and pepper. I used some of my spice rub to give it a little more zing but not necessary > Now with a hot grill put them skin side down, grill until starting to char a little and turn.

Now start to add the BBQ sauce and turn. Do this 4 times until you build up a nice crust on the outside as you can see in the photos. Now when they are ready give them one last baste and let them rest for 5 min. I like to serve mine with sour cream and chive dip on the side really works nice. I also will add some chopped mango as well it goes nice with the heat and the sweet of mango works great in my opinion.

Give it a try folks you won’t be disappointed in this one..summer is just around the corner….I hope
