Benny’s Shrimp Fajitas

- one red pepper and one green pepper cut into strips
- 3 tablespoons olive oil
- one onion cut into strips
- juice of one lime
- 2 tablespoons chopped garlic
- 1/2 teaspoon Cumin
- 12 shrimp cleaned shells off
- pinch kosher salt and pepper
- No Fat Greek Yogurt
- Blue Corn Tortilla chips
- fresh cilantro
Take all the ingredients minus the garnish and put into a freezer bag and let marinate room temp for 20 min giving the bag a shake every few min.
Now get a wok or fajita pan ripping hot either in a 500 degree oven or on the stove you want to do this about 5 min before you’re ready.
Now be careful and carefully dump all the ingredients from the marinating bag into the hot pan and give it a quick shake so everything is even and there is one layer so nothing is piled on each other.
If using the stove take it off the heat and watch as the liquid starts to come out then evaporate. If your pan is not hot enough and it stops sizzling to early put it back on the burner as needed.
Give it a slight stir and you will see its ready when there is some nice color on the veg and all the liquid is gone. Garnish with dollops of Greek yogurt (you can use sour cream) , cilantro and some blue corn tortillas.
Eat with a fork for a low carb meal or you can use traditional tortillas and even serve over rice.
