Calamari with Garlic and Peas

Ingredients

  • 2 cups cleaned squid cut into rings
  • 2 cups fresh or frozen peas
  • 1 shallot finley chopped
  • 2 cloves of garlic minced
  • splash dry white wine
  • kosher salt
  • crushed chilis
  • handful chopped parsley
  • 3 tablespoons olive oil
  • squeeze lemon

Directions

Start with a hot pan add the olive oil, when its starts to smoke add the garlic and onion, kosher salt and toss around for a min until just starting to caramelize.  Now add a splash of white wine and let that reduce to almost nothing about a min. Now turn up the heat to high and toss in your peas and a little more kosher salt and toss them around for about a min then let them sit for 30 sec. Now add a pinch of crushed chilies and  add the calamari rings and toss that for about one min making sure the calamari is cooked all the way through. Finish with some chopped parsley check for seasoning and plate. Finish with a little splash of olive oil and lemon if you like. Perfect tapas for drinking wine, taste great at room temp serve with some crusty bread.
