- 2 skinless boneless chicken breasts
Marinade for Chicken
- one cup olive oil
- juice of one lemon
- one shallot sliced
Start with you chicken breasts, slice it in half leaving a little hinge to it so it’s one piece. Put it between two pieces of cling film and carefully start pounding it thin until its about a 1/4 of an inch thick.
Now take you marinade (mix the olive oil, lemon and shallots together) and cover the chicken with it for about ten min not to much longer as the lemon will start to cook the chicken.
When ready to grill take chicken out of marinade and season with kosher salt and pepper and cook on a very hot grill for about 4 min on one side turn over and finish another 2-3 min. Take off and let rest for at least 2 min this is important.
To serve make a mix of your favorite greens and mix with a little olive oil and lemon juice and plate on top of the chicken. Easy healthy and quick.
