This salad I love to serve with roast chicken. I give this one a little heat by adding some fresh chilies but this a beautiful summer salad or ….eh hem…. vegetarian salad great anytime of the year. This one should take you about 5 min to make but its fantastic flavor and great nutrition for you. To show you one other application for this salad I boiled some shrimp and refreshed them in some ice water. Sliced them up and added them into a corn tortilla with some fresh lime….that also worked magic kids!
- Can of rinsed chick peas
- One shallot chopped
- One red chili chopped
- One tomato chopped
- 5 fresh mint leave and 5 fresh basil leaves chopped
- Good drink of Olive oil
- Kosher salt and pepper to taste
- 1/2 cup crumbled feta cheese
Combine all ingredients in a bowl add olive oil until lush and garnish with some mint and basil leaves.
