Ok I know… why am I doing this well.. because ever been to someone’s house, its summer and they put out some hotdogs that have been boiled on a fresh bun and there is a ketchup bottle lurking around and no mustard….we have all been to these parties and no thanks! If you’re going to serve something so simple as a hot dog let’s try and do it right. It’s all about the quality ingredients and execution just like when doing at Gray Papay's here in New York. This is the 1st of 3 different dogs I did and I’ll walk you through this one which you can make 48 of these is no time at all. Here how I do it…..

Ingredients

  • Good All Beef Wieners
  • Fresh hot dog buns or potato rolls work nice too
  • Good Quality Sauerkraut
  • Good Brown Deli Mustard

Directions

In my opinion grilled is the only way to go. It brings out the flavor of the wiener and adds really nice texture. You can also add some glazes if you want like teriyaki or BBQ sauce. Now put the sauerkraut in a pot and cook it for about 20 min its breaks it down a little and mellows some of the flavors. Now hot grill and put your hot dog on and keep an eye on it turning after a few min until you can see the fat starting to come out of the dog and it is nicely caramelized.

Now toast the bun right before you serve it until you get light grill marks. Now to assemble place the dog in the bun, I put mustard on each side of the dog and put a nice even layer of the sauerkraut and voila! That is how you make a good old fashion hot dog!

Now all I need is a cold beer and Yankee stadium!
