Here is a really easy and quick way to prepare Dover soul. I love this flat fish as it’s the perfect texture for this preparation. Easy stuff and simply amazing flavor!

Dover Sole with Caper Butter

Ingredients

  • Dover sole filets
  • Tablespoon Capers
  • Flour
  • One beaten egg
  • Kosher salt
  • Splash White wine
  • Parsley

Directions

 

Put some seasoned flour (one cup flour with 1/2 teaspoon kosher salt and pepper) in one bowl and a beaten egg in another. Now dredge the fillet in the flour first knocking off any excess and now into the egg and shake off any excess.  Hot pan olive oil fry on the first side for about 90 seconds or until the outside is golden. Turn over the fish and add the capers, then a splash of white wine and a pat of butter. Let it reduce down and baste the fish a few times.

Once the pan sauce has tightened up plate the fish and add some fresh parsley and that’s it!

Amazing taste really rich and those capers with their briny flavor just make it perfect.
