Fire Roasted Peppers and Manchego Cheese

Ingredients

  • your favorite Manchego Cheese Spanish cheese I used 8 month aged but 6 works fine as well less nutty
  • fire roasted peppers jar is fine for this
  • red wine vinegar
  • olive oil
  • kosher salt
  • smoked paprika

Directions

It could not be easier start by cutting your pepper and manchego cheese roughly the same size. Now place a piece of the cheese on top of the peppers slice as I have in my photo.

Now a little splash of red wine vinegar and a drizzle  of olive oil and a few grains of kosher salt.

Into a 450 degree oven for about 2 min until the cheese is melted we don’t want any color here just to heat the pepper and melt the cheese.

Take out and let rest for a  min then dust a little smoked paprika on top and eat with some flat bread or on its own its just fantastic!
