Fried Manchego and Sweet Tomato

- 12 or so grape tomatos
- 12 cubes of manchego cheese cut roughly into cubes same size as the grape tomatos
- olive oil
- fresh basil
Heat your oil in a small pot to 225 degrees carefully drop your grape tomatoes into the oil for 30-45 seconds take out and drain on paper towel
Increase oil temp to 280 degrees and using a spoon drop the cheese in and keep an eye on it once they start to bubble about 15 or so seconds take out.
Using toothpick skewer the cheese then onto the tomato and finish with a tiny strip of fresh basil. Now give these a try and I promise it will be a very sweet savory bite all in one.
