Mini Egg Roll Ups!

- 4 organic free range eggs
- Thin sliced parma ham or any other soft cured meat you like about ten or so slices
- Grated cheese like aged gouda or sharp cheddar
- Olive oil
- Equal amounts or Saracha and Ketchup
I use a little mini pan which you can pick up for about 10 bucks. Also great for cooking one perfect fried egg. Now beat your eggs with whatever herbs you want (I used chives) and set aside. Now have your thin sliced ham and the grated cheese ready. With a little olive oil in the pan add a small ladle of the egg and cook until it’s starting to set.
Add one piece of ham and some of the grated cheese and cook for another 30 seconds. Now slide onto a cutting board and roll it up like a cigar as seen in my picture. Add some chopped chives and serve with the dipping sauce… AMAZING!
These are great room temp so they are good for parties or even a starter…enjoy kids!
