Muscles with fried potato and chipotle cream

Ingredients
- Potatoes
- Fresh farmed muscles
- Kosher salt
Chipotle cream sauce:
- ½ cup sour cream. Blend together in food processor set aside.
Directions
Cut the potatoes into ½ inch squares and season with kosher salt.
Now in a hot pan with about ¼ inch of olive oil pan fry the potatoes until they golden brown. Take your fresh muscles and steam them open either in a Chinese steamer or in a pot with just water.
When they are open take them off and when cooled remove the meat from the shells and set aside.
Now just assemble, first potato then sit a muscle on top and finish with a little chipotle cream.
I also used some lemon zest to life it up a little but that is optional. These are amazing little bits of love.
