Here is a favorite tapas from Spain that I just love and it perfect for parties as its good at room temperature and goes great with cold beer. These are about as addicting as they get and very inexpensive to make and very easy!

Ingredients

  • Potatoes
  • Fresh farmed muscles
  • Kosher salt

Chipotle cream sauce:

  • ½ cup sour cream. Blend together in food processor set aside.

Directions

Cut the potatoes into ½ inch squares and season with kosher salt.

Now in a hot pan with about ¼ inch of olive oil pan fry the potatoes until they golden brown. Take your fresh muscles and steam them open either in a Chinese steamer or in a pot with just water.

When they are open take them off and when cooled remove the meat from the shells and set aside.

Now just assemble, first potato then sit a muscle on top and finish with a little chipotle cream.

I also used some lemon zest to life it up a little but that is optional. These are amazing little bits of love.
