The single most popular item in America if on a menu. If a restaurant has it as a part of a dish or just on the menu they will sell them all night long. This is how I like them with a mix of tempura batter and flour. These are perfect with spicy ketchup or hot sauce.

Ingredients

  • Yellow Vidalia onions
  • Club soda
  • Flour or tempura mix
  • Seasoned flour with kosher salt and pepper
  • Canola oil for frying
  • Paprika

Directions

Start by cutting the onions into ¼ inch thick rings and separate them. Soak them in ice water and set aside.

Prepare the tempura batter, add one cup of flour to a bowl and start adding club soda until you have a fairly thin batter, add a dash of paprika this will be for color. Now let it sit for a few min, it will get a little thicker but that is ok.

Now in another bowel put another cup or more of flour and season with salt and pepper. Now get your canola oil hot about 350 degrees. Now work in batches making sure not to overcrowd the pot or fryer of oil. Dip the onions in the tempura batter, shake off the excess, now into the seasoned flour, shake off excess now back onto the batter now shake off excess and time to fry them in 350 degree oil until golden brown and you can see that most of the moisture has come out of them.

Take them out, season them right away and serve…that’s it easy stuff take you about 20 min to make a enough for 6-8 people less time than getting them from the take out which they will be soggy by the time you get home and much much cheaper!
