Ok I was challenged tonight, I want dessert but I can't have any milk or eggs today because of my religious schedule. So I look around and I see some nice tangerines and it comes to me. I remembered long ago a trick a chef showed me on how to make a great pancake/crepe batter without milk or eggs. So here it is and I dare you to serve this to anyone and have them tell you this was any less is taste or most important texture.

Oranged Glazed no egg no milk Pancakes

Ingredients

  • 1 cup AP flour
  • 1 teaspoon baking powder
  • 1 tablespoon pure vanilla extrat
  • 1 tablespoon caster sugar plus more for dusting
  • 1/2 cup orange juice
  • 1/2 cup water add slowly until you get consitancy you want a slight loose batter
  • 1/2 tablespoon cinammon plus more for dusting

Orange Glaze

  • 1 1/2 cups orange juice I used fresh squeezed
  • 1 tablespoon caster sugar
  • 1 whole orange cut into segments

Directions

Start by putting all the ingredients for the Orange glaze into a pot and on medium heat start to reduce the juice with the Orange segments until it is a nice  thick maple syrup consistency, keep warm and set aside.

Now combine the flour, vanilla, Cinnamon, baking powder, sugar, orange juice and water and mix together until you have the batter you are looking for in texture more water for more crepe like and less for pancake like.

Heat a pan to medium heat and for this I used olive oil for the taste, add a teaspoon to the pan and now take two tablespoon of the batter and make your pancakes. Keep an eye on them in the pan and when you see the bubbles coming up in the center and a little of the olive oil crusting the edges its time to flip them.

Now give them about a min on the second side then remove to a plate and immediately sprinkle some caster sugar and a dusting of cinnamon on them. Now repeat until you have all of the little pancakes you need.

To finish put three a plate, spoon a couple orange segments onto the pancakes and finish with a drizzle of the orange glaze. I guarantee you that no one will have a clue that these contain no eggs and no milk and the kids will go nuts over them.
