1 filet Rockfishor any white fish of your choice just not oily like mackrel

1 tablespoon Unsalted Butter

2 tablespoon Olive Oil

4 tablespoons Lemon Juice

1 cup AP Flour

Salt and PepperKosher or Sea Salt

1 tablespoon Capersrise the capers to get some of the salt off

Making the pan sauceCook the fish until browned on the first side about 3 min turn over let cook for another 2 min then add the lemon juice and capers. Let cook down until sauce is thickening and adjust to taste. Add a little more butter or lemon juice of needed. Remove the fish onto a plate and spoon the pan sauce over the fish and serve with some of your favorite veg and a lemon wedge. |
