Ingredients

Adjust Servings:
1 filet Rockfish or any white fish of your choice just not oily like mackrel
1 tablespoon Unsalted Butter
2 tablespoon Olive Oil
4 tablespoons Lemon Juice
1 cup AP Flour
Salt and Pepper Kosher or Sea Salt
1 tablespoon Capers rise the capers to get some of the salt off

Dredge the fish in the flour

Start by seasoning the fish with salt and fresh ground pepper. In a large bowl or pan have enough flour to be able to cover the entire fish, dredge until fully coated.

Frying the fish

Medium high pan with the olive oil and butter, wait until it's hot, sprinkle in a little flour it should sizzle you know it's ready (not smoking though).

Making the pan sauce

Cook the fish until browned on the first side about 3 min turn over let cook for another 2 min then add the lemon juice and capers. Let cook down until sauce is thickening and adjust to taste. Add a little more butter or lemon juice of needed.

Remove the fish onto a plate and spoon the pan sauce over the fish and serve with some of your favorite veg and a lemon wedge.
