Ingredients
- 2 portabella mushroom caps
- Fresh mozzarella ball
- Caramelized shallots
Tomato Sauce
- large can of peeled tomatos
- 1/4 cup olive oil
- handful of fresh basil
- 4 garlic gloves
- teaspoon crushed red peppers
- kosher salt
Directions
Make the tomato sauce by starting with tomatos in a pot with all the ingredients until bubbling. Reduce heat simmer for 45 min, blend with hand mixer or leave rustic, set aside.
Take the stem of the mushroom and chop them roughly.
Using a spoon scrap out the fins from inside the mushrooms.
Now add 3 tablespoons of the tomato sauce followed by the mushroom stems, then a lawyer of Parmesan cheese, now the shallots and the mozzarella cheese. Finish by a drizzle of olive oil, a pinch of kosher salt and dried chili peppers.
Bake in a 450 degree oven until the cheese is bubbling and is starting to get some nice color on top.
Take out, let rest for a few min, add some more Parmesan cheese and enjoy!
