Ingredients
- Fresh Salmon Filets
- Russet or baking Potato’s peeled
- Whole grain mustard
- Crème fresh or sour cream
- One tomato peeled and seeded
Spicy Tomato Sauce:
- One fresh red chili chopped and seeded
- Dash of red wine vinegar. Chop everything together and simmer in a pan until slightly reduced, salt to taste.
Directions
Peel the potatoes and grate into a bowl.
Now fill bowl with water and let the some of the starch out by soaking for 10 min. Now remove and put in a paper towel and squeeze all the excess water out and set aside.
Take you salmon filet and with a pastry brush coat all around with whole grain mustard evenly. Now coat in the grated potatoes all over the filet and season with kosher salt and pepper. Hot pan olive oil and fry on each side until golden brown.
Let rest for 2 min then plate with chive crème fresh and spicy tomato salsa and enjoy!!
