Puff Pastry Ham and Cheese Snacks

- puff pastry sheet buy good quality frozen puff pastry
- dozen thinly sliced parma ham
- one cup grated sharp Cheddar Cheese
- one egg yolk plus a little water for egg wash combine the two and whisk together
Basil Pesto (optional)
- 2 cups fresh basil
- 1/2 cup or so olive oil
- 1/2 clove of garlic
- pinch of kosher salt
Make the pesto, combine all ingredients into a food processor and blitz together until a nice loose paste. Add more oil if its to thick.
Roll out your puff pastry and put a layer of the parma ham followed by the grated cheddar cheese and finish with some of the pesto drizzled on top.
Now roll it up like you would a carpet and cut into one inch rounds (as shown in my photos) and brush with the egg wash.
Bake @350 degrees until golden brown, take out and cool on a rack. That’s it easy kids!
