Roasted Dover Sole with parsley bread crumbs

Ingredients
- 2 Dover sole filets
- ½ cup Bread crumbs
- 2 tablespoons Grated parmesan cheese
- Lemon zest from one lemon
- ½ cup chopped parsley
- Olive oil
- Juice of a fresh lemon
- Splash of white wine
- Unsalted butter
- Teaspoon honey
Directions
Take the juice of one lemon and mix with equal parts olive oil and the honey, whisk together. Now marinate your filet in this for about 10-15 min but no more of the texture will start to change.
In a separate bowl combine the bread crumbs, lemon zest, Parmesan cheese and parsley and set aside for now.
Now in a hot pan fry the filets on one side for about 90 seconds until brown. Now turn over and place some of the breadcrumb mixture on top of the filets and drizzle with a little olive oil. Add a pat of butter to the pan and a splash of white wine and put in a 400 degree oven for about 2 min until the bread crumbs brown.
Plate and spoon some of the pan sauce around the fish and enjoy!
