Although not as popular here in the USA as say in London where everywhere I turned you will find Chicken Tika Marsala with mango chutney on the menu. Most curries are horrendously fatty and full of butter and cream or coconut milk which the proteins and veg swim in. Put this on some rice and you basically are eating a chocolate cake with ice cream……now I’m not here to lecture on how to eat curry but I will offer this way of serving it that not only lets the flavor of the veg and in this case Salmon shine through but is much healthier. To add some additional flavor and texture I fried some soba noodle to place on top and it really turned out amazing. Check this out low carb full of flavor and easy to make.

Ingredients

  • 8 oz salmon filet
  • Handful Fresh green bean with the ends trimmed off
  • Red onion cut into quarters and just using one layer at a time
  • one clove chopped garlic
  • 1/4 cup Heavy cream
  • Fresh red chili
  • 2 cups Chicken stock
  • handful Fresh basil
  • Soba noodles
  • 2 tablespoon Curry powder
  • Canola oil for frying

Directions

Start out by making the curry sauce: Take two tablespoons of curry powder add it to a little canola oil and cook it out for a few min. Then add two cups of chicken stock and a little water. Now cook this for at least 30 min to get the rawness out of the curry powder and add ¼ cup of heavy cream. Let simmer and reduce while you prepare the rest of the dish.

Now hot pan canola oil and sauté the beans, onion, garlic and chili until starting to sweat nicely then take out set aside in a warm oven 225 degrees.

In the same pan cook your salmon filet season it with salt and pepper first and pan fry it each side until done about 3-4 min a side. Add this to the oven with the veg.

Now let’s make the crunchy garnish for the top which is not a garnish as it’s an import element of the dish. Take a few soba noodle and with a pot with some canola oil about 325 degrees and fry them for about 15 seconds until they lose all their moisture and get golden , set aside.

Now to plate, place the beans and onion on the plate followed by the salmon, I would break it up into two pieces, now place some fresh basil on the right hand side and put the fried soba noodles on the salmon. Now finish by spooning the curry sauce around the beans and on the bottom of the plate. Don’t pour it over the food but sauce it on the plate and that should do it.

Beautiful, low carbs healthy and F ing delicious …I couldn’t wait to eat mine!
