Ingredients

  • 4 oz salmon filets with the skin off
  • One fennel bulb and fronds
  • One shallot
  • Fennel powder
  • One slice of an orange, tangerine.
  • One slice of lemon
  • Kosher salt
  • Fresh cracked pepper
  • Olive oil

Directions

Start by slicing the fennel and the scallion thin and make it about 2/3rd fennel to 1/3 scallion.

In a medium heat pan cook them both seasoned well in a little olive oil until they are just starting to take on color then set aside.

Take a piece of parchment paper about 12 inch long and put the salmon in the middle and season, now put the orange and lemon on top with some of the fennel powder and finally put the fennel and scallion on top.
Now seal up the parchment paper and bake at 375 degrees for roughly 12-18 min depending on your oven and the salmon.
Take out and remove from paper and plate adding some of the fresh fennel fronds on the salmon to give it a little freshness.

That’s it! easy stuff and amazing in nutrition and taste.
